Immune Boosting Foods and Well-Being in the Context of Food Pantries, Their Clients, and COVID-19: A Case Study.
Judymae Richards
The case study research project is to explore the First Millsboro SDA Food Pantry’s contributions to community well-being. Community strengths will be surveyed through the First Millsboro SDA Food Pantry staff and clients. The survey and follow-up interviews will explore individual and community well-being as impacted by food preferences, in particular, immune-boosting foods. We believe shared strengths are an integral part of community well-being. This is an attempt to explore and understand strategies that contribute to community resilience that can guide decision-making of participants – the Food Pantry as a member of the community, individuals in the community, and the community as a collective.
